  • 1 teaspoon white grape juice
  • 23 tablespoons ice cold water
  • 2 tablespoons salted butter, melted
  • 2 teaspoons granulated sugar
  • 1 teaspoon milk
  • Flaky salt
  • Honey for drizzling

Instructions

  1. Make the Dough: In a bowl, combine flour, salt, sugar, cheddar cheese, and thyme. Cut in chilled butter until crumbly. Gradually add white grape juice and ice water until dough holds together.
  2. Chill: Form dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
  3. Prepare Apples: Slice honeycrisp apple and toss with melted butter and sugar.
  4. Roll Out Dough: On a floured surface, roll out chilled dough into a 10-12 inch circle and transfer to a parchment-lined baking sheet.
  5. Assemble: Sprinkle half the cheddar on dough, layer with apple slices, then top with remaining cheddar.
  6. Fold Edges: Fold the crust edges over apples and brush with milk; sprinkle flaky salt on top.
  7. Bake: Preheat oven to 400°F (200°C) and bake for 35-40 minutes until golden brown.
