  • 1/2 teaspoon cinnamon
  • 1 cup plus 2 tablespoons all-purpose flour
  • 1/8 teaspoon ground nutmeg
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter (melted)
  • 3/4 cup light brown sugar (packed)
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (180°C) and line an 8×8 inch pan with parchment paper.
  2. Peel and core the apple, then dice into small chunks and toss with cinnamon. Set aside.
  3. In a bowl, whisk together flour, additional cinnamon, nutmeg, baking powder, and salt.
  4. In another bowl, mix melted butter and brown sugar until smooth.
  5. Add egg and vanilla to the butter-sugar mixture and whisk until combined.
  6. Gradually stir in the dry ingredients until just mixed; do not overmix.
  7. Fold in the prepared apple chunks gently.
  8. Pour the batter into the lined pan and bake for 22-25 minutes until set.
  9. Allow to cool completely before slicing into squares.
