7 oz (200g) spinach
1 red delicious apple (thinly sliced)
4.5 oz (130g) gorgonzola (at room temperature)
1/2 pomegranate (arils removed)
5.2 oz (150g) turkey strips (2 slices per person)
5 tbsp olive oil
1 tbsp apple vinegar
Salt and pepper to taste
1 cup (80g) walnut halves
3 tbsp sugar
1/4 tsp chili flakes (red pepper flakes)
1/4 tsp paprika
1 oz (30g) butter
Instructions
Prepare the candied walnuts: In a pan over low heat, combine walnut halves, sugar, chili flakes, paprika, and butter. Stir until the sugar melts and coats the walnuts evenly. Transfer to baking paper to cool.
Cook turkey strips: Grill the turkey under high heat until crispy on both sides. Set aside on kitchen paper.
Make the dressing: Whisk together olive oil and apple vinegar with salt and pepper. Mash half of the Gorgonzola into the dressing for creaminess.
Toss spinach: Add fresh spinach to the bowl with dressing and toss until well-coated.
Assemble: Divide dressed spinach into bowls and top with sliced apples, remaining Gorgonzola, pomegranate arils, turkey pieces, and candied walnuts.
