  • 13 tablespoons red curry paste
  • 2 teaspoons curry powder
  • 6 cloves garlic, minced
  • 2 teaspoons minced ginger
  • 6 cups vegetable broth
  • 13.5 oz. coconut milk
  • 8 oz. ramen noodles
  • Juice of 1 lime
  • Kosher salt
  • Fresh cracked pepper
  • Fresh cilantro (for garnish)
  • Sliced jalapeños (for garnish)
  • Lime wedges (for garnish)

Instructions

  1. Heat sesame oil in a large pot over medium heat.
  2. Add shredded carrots, sugar snap peas, and sliced mushrooms; sauté for about three minutes.
  3. Stir in red curry paste, curry powder, minced garlic, and ginger; cook for one minute.
  4. Pour in vegetable broth and coconut milk; season with salt and pepper.
  5. Bring to a simmer and add ramen noodles; cook according to package instructions (about 10 minutes).
  6. Stir in lime juice before serving.
